Below is our recent interview with Matias Muchnick, CEO & Co-Founder at NotCo:

Q: Could you provide our readers with a brief introduction to your company?

A: NotCo is an industry-changing, fast-growth food tech company with a first-of-its-kind patented A.I. technology (named Giuseppe) that creates plant-based options that taste, feel, cook, and function just like their animal-based counterparts. Our company is a leader in the industry and is the first company to disrupt massive food and beverage segments including dairy, eggs and meat simultaneously on a global scale.

At an international level, we have launched products including NotMilk™, NotBurger™, NotMeat™, NotIceCream™ and NotMayo™ in five countries, becoming the fastest-growing food tech company in Latin America.

Q: Any highlights on your recent announcement?

A: NotCo recently debuted NotChicken™ to the Latin American market. A finishing touch to last year, the expansion into the booming plant-based chicken subcategory includes four deliciously juicy SKUs: NotChickenNuggets™, NotChickenBurger™, NotChickenBurgerCrispy™ and NotChickenFillet™. NotChicken™ will be available in Chile, Argentina and Brazil in more than 980 retail partners including Cencosud, Carrefour and Pão de Açúcar. In addition to launching in retail, we will be announcing several restaurant partnerships within the next few months within our current geographic footprint.

Q: Can you give us more insights into your offering?

A: Peas, chickpeas, bamboo and peaches are some of the unique ingredients Giuseppe, our first-of-its-kind patented technology, identified together with our R&D team and chefs to replicate and improve upon the taste and texture of chicken. What the team created goes even further with a golden, delicious, and crispy breading and a moist, juicy texture inside, making NotChicken™ unparalleled in terms of taste and mouthfeel.

NotChicken™ also addresses sustainability issues surrounding traditional poultry production. Choosing NotChicken™ over its animal counterpart saves 86% of water use and 73% of CO2 emissions that are used in the production process of poultry products, generating a positive impact for the planet.

Q: What can we expect from your company in next 6 months? What are your plans?

A: Our mission at NotCo is to reinvent the food industry and create a more sustainable future by taking animals out of the equation. Studies show that consumers believe switching to plant-based means you have to make sacrifices. We are working to create products so consumers do not have to make that trade-off. Giuseppe has and will continue to contribute to all our product launches, helping food scientists to improve texture, flavor and speed. Giuseppe helps fuel limitless potential in product innovation and will eventually enable our company to be a powering tool for food and beverage innovation to come.

Q: What is the best thing about your company that people might not know about?

A: People always ask about Giuseppe. It is our proprietary artificial intelligence technology that creates true plant-based alternatives that replicate animal-based counterparts faster, better, and more accurately than anyone else in the industry. This gives us an advantage due to the speed and accuracy with which it can develop and bring new products to market.

You are probably wondering how. Well, Giuseppe analyzes thousands of plants in its database to come up with unique combinations that replicate animal-based products. It understands and matches products at a molecular level to create plant-based versions of the animal-based foods we are used to eating. We have a team of scientists and culinary chefs sitting in various countries, providing feedback to improve Giuseppe every day.
