Below is our recent interview with Ajay Sunkara, the Founder & CEO at Nala Robotics:

Q: Could you provide our readers with a brief introduction to Nala Robotics?

A: Nala Robotics is an AI technology company disrupting the culinary industry by developing fully autonomous robot chefs, line cooks, pizza makers, prepping and fry stations, and now dishwashers with this month’s launch of Spotless, a robotic dishwasher that can easily be added to professional kitchens with minimal changes to existing layouts. Our new dishwashing robot can remove leftovers, rinse and clean cookware, cutlery, dishware and glassware, as well as dry, stack and store hundreds of varieties of utensils and kitchenware.

Q: Why introduce a robotic dishwasher?

A: Research says that the turnover rate for dish washers is 50 percent or higher in their first year of employment. Meanwhile, a growing number of consumers are becoming more amenable to robots taking on expanding roles in the workplace, particularly at restaurants and other food establishments. Our revolutionary patented dishwashing system allows operators to overcome staffing challenges and never miss a smudge.

Q: Can you give us more insights into your technology and products? 

A: Nala Robotics’ patented innovations have been developed by some of the world’s leading technologists and engineers. The company’s automated chefs and kitchen assistants utilize AI and machine learning so they can be updated or change tasks in real-time based on customer feedback and other inputs. Its customizable robots use machine learning to cook infinite recipes replicated with exact precision anytime, anywhere. All our products employ always-on vison and sensor processing, capable of analyzing more than 1,200 parameters every microsecond, ranging from food quality to point-of-sales, ensuring safety and enhanced productivity.

Q: Who is your ideal client and why? 

A: Our technology is being installed across industries to meet ever-changing demands. Our target customers include mom-and-pop operators, national restaurant chains, pizzerias, budding entrepreneurs, senior living centers, food courts and other commercial venues.

Q: What can we expect from Nala Robotics in next 12 months? What are your plans?

A: Our company will continue to innovate, build new solutions and expand our customer base. We are also looking to raise some funding to help get us to the next level and expand our product pipeline, and distribution throughout the U.S. and the world.

Q: What is the best thing about Nala Robotics that people might not know about?  

A: When we set out to establish the company, we had no idea the labor market would be so challenging for restaurant operators and the hospitality industry at large. Our autonomous chefs and kitchen assistants are helping to fill this void, providing a reliable workforce, particularly for hard to fill positions with low retention rates. Labor costs are reduced by as much as 60 percent and robots don’t require high maintenance beyond an occasional software upgrade. Food safety is also enhanced. According to the CDC, 87 percent of foodborne illnesses happen in restaurants, mostly spread by hand-to-hand or hand-to-food contact. Needless to say, with virtual kitchens from Nala Robotics, our AI chefs do all the cooking — and don’t get sick, other than needing a routine software upgrade now and then.
